For the abundance of rhubarb we have...I found this recipe on my beloved Pinterest:
RHUBARB VANILLA POUND CAKE
(1 loaf or 3 mini loaves)
2 cups Rhubarb cut into 1/2 inch pieces
1 1/2 cups sugar, divided
1/2 cup butter, room temperature
3 large eggs
2 tsp vanilla extract
1/3 cup sour cream
1/2 tsp salt
1 1/2 cups all-purpose flour
Preheat oven to 350 degrees.
Lightly grease loaf pan(s)
In a medium frying pan, mix the cut rhubarb with 1/4 cup sugar. Over medium-high heat, cook the rhubarb until it is fork tender but not mushy, about 5 minutes. The rhubarb needs to be able to hold its shape or it will get lost in the cake batter. Set aside to cool.
In a large mixing bowl, beat together the butter and remaining sugar until light and fluffy. Add in the eggs one at a time mixing well between additions. Mix in the vanilla, sour cream, and salt until uniform. Stir in the flour until just incorporated. Gently fold in the rhubarb pieces and any juice remaining in the pan.
Transfer the batter to the prepared pan and sprinkle the top with a tablespoon of sugar. Bake for 45-55 minutes, or until a toothpick inserted into the center comes clean.
Serve warm or room temperature, with strawberry jam ... and, of course, a cup of coffee :)

Other happenings this week....
Rain. YEAH!
The beginning of the rainy season. With it you get a few of these beauties. Amelia was sleeping and I was almost tempted to wake her...not.
LOTS of tea parties lately.
I bought her a teeny tiny porcelain set to use with any of her teeny tiny dolls or Littlest Pet Shop animals. She moves the tea cups around constantly...I am sure she does this as she loves the clink sound.
She complained she didn't have a proper sugar and creamer and then she ran and got her plastic serving tray from her lego cupcake set. I had an idea. I gave her some of the real stuff (non-breaking kind) and she was just thrilled! Having proper tea and coffee ever since! And you MUST have cream and sugar with every refill.
On the lookout for small pewter/non breakable tea cups to replace her blue plastic for morning tea.
And like any proper young lady, she has another set of plastic for when she is at the cottage :)
