Raspberry Mousse, Pumpkin Bread And A Couple Finished Projects...oh and a bear

Our raspberry patch made me proud this year.  


Thanks to our neighbors, Renee and Walt, who were thinning their patch and brought a few more bushes over to us.  The more the merrier I say, everyone in our house loves raspberries! Including this dessert:


Raspberry Ricotta Mousse

1 (15 oz) container whole milk ricotta cheese
1/2 cup raspberry jam
1 cup whipping cream
3 tablespoons powdered sugar
1 cup fresh raspberries 

In a food processor, blend the ricotta cheese until light and fluffy...about 20 seconds.
Add the jam and pulse until combined.  
Transfer to a large bowl.
In a separate bowl, using an electric hand mixer, beat the cream until thick.
Add the powdered sugar and continue to beat until the cream holds stiff peaks.
Working in batches, carefully fold the cream mixture into the ricotta mixture.
Spoon the mousse into serving bowls and refrigerate for 1 hour. 
Garnish with fresh raspberries and serve. 

This is one of my favorites and a delicious way to use our raspberries!  At first I thought ricotta cheese???? But then I made it and wow....delicious and a light elegant dinner dessert.  
Saw it first when Amelia was a baby... I would watch Giada at Home on the Food Network while putting her to sleep or feeding her :)

Pumpkin Bread:

4 eggs
3 cups sugar
1 cup oil
2 cups pumpkin (I used one 15 oz can although it is a little less than 2 cups)
3 plus 1/3 cups flour
2 tsp. baking soda
1 plus 1/2 tsp salt
1 tsp cinnamon (I use 3 :)
1 tsp nutmeg
2/3 cup water
Beat eggs until light.  Add sugar, oil and pumpkin.  
Beat well. Add sifted dry ingredients with water to egg mixture.  Bake in 4 small loaf pans at 350 degrees for 45-50 minutes OR use two regular sized loaf pans for 60-70 minutes.

Amelia and Rob....ok me too....gobbled this up quick. Actually time to make a couple more loaves.

I also completed a few projects ... doesn't that feel great when you actually finish something that has been hanging around ... like forever ??!!!

Ok...I will confess...there are 2..but I finished 1!  Woo Hoo!  I think I kept putting it off as there were 2 and kept thinking of all the hand sanding...and I had a line of projects ahead of this one :)  One was much more manageable.  Funny how our brain works.  The other I hope to get going this week or next.  Before the snow flies.  Sand, sand, sand...2 coats of cherry stain and a coat of tung oil.  Then the skin ripping task of weaving the seats.  

We bought these for $70 on Craigslist a year ago if memory serves from a gentlemen who even enclosed the original receipt from Shaker workshop in the 1980s and said "after we glued them together, they sat for all those years.  They retail at close to $300 when complete at Shaker Workshop and I knew I wouldn't let them sit for that long ;)  Another Craigslist find!  I will have a post soon on another fantastic CL score soon....it's a doozy.



I bought this box quite awhile ago as well and it was in line with the other projects.  Amelia needed a larger tooth box and this one seemed to do the trick.  After refinishing the box I modge podged the printed lettering  (yep there is a bubble but figured oh well) and rough sanded, then sprayed acrylic sealer and finally sprayed glitter over the entire thing... for tooth fairy flare. 


Still room for more, but she is not expected to lose any more until she is 8 or 9.  



And if you are thinking it is October and Halloween is coming....



we have been decorated since I first spotted a Halloween item at the store in September :)  This year I made a Halloween Advent ... 30 little surprises in that pot waiting for Amelia's sticky little fingers to reach into the spider web VvvvV.   She's open a few already...


We also had a bear right up on our deck a couple days ago.  I thought he was trying to get in the window at one point, but then realized he was only trying to take down our wasp trap.  Phew!



We had a spectacular sunset as well.


Next time:  A Halloween Playdate that Amelia said was "the best day ever."
