Portage


Monday we took a day trip down to Portage (about an hour and a half away). Portage is home to Portage Glacier that you could once see from the museum/visitor center when it was built, but since has receded and now only visible by the tour boat that you can take out on Portage Lake.  We have done that several times, however this trip was just to walk around and show Amelia the museum.


Portage is known for extremely high winds (a gust to 200mph was once recorded).  In fact, I don’t believe I have ever been there without a good breeze.  With the record breaking snow this year, there were no icebergs from the glacier in the lake (no real melting yet!) and there was still some ice on the water...it was chilly!


We walked around, went in the museum and listened to a lecture on how America got a hold of Alaska thanks to the Sea Otter and its pelt.  Amelia was as quiet as a mouse throughout the lecture due to the speaker giving her a stuffed sea otter to hold.  She didn't complain much either when we had to give it back which was surprising.

Apple Lover


I received a notice from Apple about a year ago regarding their move to iCloud from MobileMe.  I did the switch and figured everything was fine, but recently I kept getting a notice saying "Move to iCloud!...Move to iCloud NOW!...Time is running out!”.  What the heck! I already DID!  

Well I didn’t.  I wasn’t paying attention apparently and didn’t read that Apple will no longer be hosting websites for their iWeb and will no longer be updating the software.  That is where my site has been for the past few years.  Catastrophe! What to do.  What to do! I don't have much time! I had just changed it to be a blog and was really enjoying posting every other day or so about everything and anything.

I went on all the forums and the best advice for my particular circumstance was to move to one of the blog formats.  I picked Blogger.  I cut and pasted all the blog entries and switched my domain name to the new blog and VIOLA the move is done.  Triumph!  True, I was panicked at first (ask Rob), but now I am pretty happy.

The official iCloud move is June 30th, so I am hoping I have moved everything and my contacts and mail are not going to be a disaster.  

I didn’t move all the photo pages, but cleaned up a lot of the entries, which I have been meaning to do anyways.  I am going to wait to “share” photos until the iCloud move is complete, but I am confident it will be easy sharing and will get all the pics for family and friends back up and running.  In the meantime enjoy the pics I post on the blog.

Apple is also doing away with iDVD too…I still need to cope with that as family knows I love doing my yearly dvd!  I do understand Apple’s logic in making everything in the cloud and you share what you want…including movies.  Will keep you posted.

Dance at ADT

It was Amelia’s first dance class at Alaska Dance Theatre this past Tuesday!  Mommy’s stomping grounds for 5 years before she was born.   She was one of only 2 girls…the rest were boys! Her teacher has a son in the class and I think many of his buddies were there too.  She loved it and loved watching the older girls even more it seemed! 

And GASP!... she wore her ballet shoes!  She is quite the ballerina.

Why We Love Sundays

Big Breakfasts and projects usually define our Sundays.  We end with a movie in the evening, which tonight will be the Lion King.  She really has not shone any interest in it yet and I don’t know why as she loves so many disney movies.  Will cross our fingers as it is Mommy’s favorite :)
We began our day with a bit of drawing.  She is getting pretty good at faces!  Then came a big breakfast, complete with maple sausage, eggs and toast with marmalade.  It was Amelia’s first introduction to orange marmalade.  It was a hit.

 Then back upstairs for an art project:  Tissue paper art.  Great for Toddlers...glue paper and tissue paper.  Amelia loves glue and this is a pretty “safe” way for her to use it (I am referring to messes).


Yet another masterpiece....looks like our Alaskan Mountains!


Memorial Day Weekend

Work work work...geesh I think we broke some child labor laws this weekend!  Amelia helped me with the gardening and baking (sort of)  and Rob with the car wash (sort of again).  
We planted all our flower pots and added cabbage and leeks to the garden.  She is not really good at spotting weeds yet, as everything is fair game.



Washing the car turned into a whole morning ordeal, but she loved it...if it involves water...she usually likes to do it.  The car got VERY clean!


Chocolate Peanut Butter Cupcakes
 We have been doing lots of Chocolate and Peanut Butter.  Why not cupcakes.  She ate so much of the filling that I think she could only eat the frosting when she got to try a completed one!  Lots of fun making these...delicious too I might add.
For the filling:  
1 cup confectioners' sugar
¾ cup creamy peanut butter
4 tbsp. unsalted butter, at room temperature
½ tsp. vanilla extract
For the cake:
1  2/3 cups all-purpose flour
¾ cup unsweetened cocoa powder
1 tsp. baking soda
½ tsp. salt
1 cup sour cream 
2 tbsp. milk
1 tsp. vanilla extract
8 tbsp. unsalted butter, at room temperature
1½ cups sugar
2 large eggs
For the frosting:
8 oz. cream cheese, at room temperature
4 tbsp. unsalted butter, softened
½ cup creamy peanut butter
3¼ cups confectioners' sugar
1 cup frozen whipped topping, thawed
Directions:
Preheat the oven to 350° F.  Line two cupcake pans with paper liners.  
To make the filling, combine the confectioners' sugar, peanut butter, butter and vanilla extract in a bowl.  Beat with an electric mixer on medium speed until well combined.  Roll the mixture into 1-inch balls (at least 24) and set aside on a baking sheet.
To make the cake batter, combine the flour, cocoa powder, baking soda and salt in a medium bowl; whisk together and set aside.  In a liquid measuring cup, stir together the sour cream, milk and vanilla extract.  In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and sugar, and beat on medium-high speed until light and fluffy, about 2 minutes.  Beat in the eggs one at a time, scraping down the bowl as needed.  With the mixer on low speed, alternately add the dry ingredients and the sour cream mixture, beginning and ending with the dry ingredients.  Mix just until incorporated. 

Spoon a tablespoon or two of batter into the bottom of each cupcake liner.  Place a ball of the peanut butter filling in each cupcake well.   


and top with the remaining batter so that all the cups are filled.    





Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.  Allow to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.


 To make the frosting, in the bowl of an electric mixer fitted with the paddle attachment, combine the cream cheese, butter and peanut butter until smooth.  Slowly mix in the confectioners' sugar, beating until smooth and well blended.  Mix in the whipped topping until smooth and fluffy.  Frost cooled cupcakes as desired. 


and Enjoy! 


 Or just eat the icing.   

 Bieri’s Return to Alaska for a Visit
Our friend’s the Bieri’s returned this weekend for a visit to Alaska.  Amelia loved the attention!  Only had the point and shoot so pics are not that great.  Sorry!




 Amelia will grow to love Jane, but for the moment had eyes only for...
